My husband has declared Apple Pie Coffee Cake not only the best coffee cake recipe, but THE BEST thing I have ever made (!!). 

This apple cinnamon coffee cake recipe is like a glorious combination of Dutch apple pie and sour cream coffee cake. It has layers of soft, moist yellow cake, gooey apple filling, cinnamon brown sugar crumble topping, and a sweet, simple glaze. 

The best part? This apple crumb cake starts with a boxed cake mix and canned apple pie filling -- so easy!!

Box of yellow cake mix. Go ahead and ignore the directions on the box. 

Sour cream. Sour cream makes the cake moist and rich. 

Apple pie filling. Two full cans of apple filling create a gooey apple pie layer in the middle of the cake. You can use store-bought canned pie filling or homemade apple pie filling

Variations

Cake mix. You can use any kind of box cake mix in this delicious recipe like white or spice cake mix. 

Spices. Spice up the box of yellow or white cake mix with some cinnamon, nutmeg, and allspice or apple pie spice. 

Pie filling. Try an apple cherry coffee cake with one can of apple pie filling and one can of cherry pie filling. 

Glaze. Change up the glaze ingredients and make a maple glaze. Just swap out the milk for a little maple syrup. 

How to Make Coffee Cake Using Cake Mix and Apple Pie Filling

Step 1: In a large bowl, mix the dry cake mix, melted butter, egg, and sour cream with an electric mixer on medium speed for two minutes. The batter will be quite thick and sticky.

Step 2: Pour the cake batter into a baking dish and spread it into the pan with a metal offset spatula or a silicone spatula sprayed with cooking spray. Bake for 10 minutes.

Step 3: While the cake bakes, combine the flour, brown sugar, ground cinnamon, and salt in a medium bowl. Add the cubed butter and cut it into the mixture using a pastry blender, two knives, or clean hands until you get pea-sized buttery crumbs.

Step 4: Spoon the apple pie filling on top of the cake.

Step 5: Sprinkle the cinnamon streusel evenly over the entire surface of the apple layer.

Step 6: Bake at 350 for 60-65 minutes or until the crumb topping is golden brown and the center of the cake is baked through. Place the cake on a wire baking rack to cool for at least 30 minutes.

Step 7: Place the powdered sugar and vanilla extract in a small bowl. Add the milk, starting with one tablespoon, adding more until it reaches drizzling consistency. I usually end up adding two tablespoons.

Step 8: Drizzle the icing on top of the cake. Serve apple coffee cake warm, room temperature, or cold, with a warm cup of coffee and maybe even a big scoop of vanilla ice cream!

Success Tips

  • If you add too much milk to the glaze, just add a little more confectioners' sugar until it reaches your desired consistency. 
  • Keep the butter in the refrigerator until it's time to make the streusel. Cold butter keeps the texture crumbly. 
  • Bake until the top is golden brown and set and no longer appears wet in the center. Internal temperature should read 205-210 on a digital instant read thermometer.

Ingredients

Apple Coffee Cake

  • 1 box yellow cake mix, 15.25 oz.
  • ½ cup melted butter
  • 1 egg
  • 1 cup sour cream
  • 2 cans apple pie filling, 21 oz. cans

Cinnamon Streusel Topping

  • 1 cup flour
  • cup brown sugar
  • 2 teaspoons cinnamon
  • ¼ teaspoon salt
  • ½ cup cold butter cut into cubes

Powdered Sugar Icing

  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 tablespoons milk

Instructions

  • Preheat the oven to 350. Grease the bottom of a 9 x 13 pan.
  • Make the cake. In a large bowl, mix the cake mix, melted butter, egg, and sour cream for 2 minutes on medium speed.
  • Pour the cake batter into the prepared pan and evenly spread it into the pan.
    Bake for 10 minutes.
  • Make the streusel topping. While the cake is baking, combine flour, brown sugar, cinnamon, and salt in a medium bowl. Add the cubed butter.
    Cut the butter into the mixture with two knives, a pastry blender, or clean hands until it becomes pea-sized crumbs.
  • Spoon the apple pie filling evenly on top of the cake. Sprinkle the streusel over the apples.

Ripe bananas. You'll need 3-4 large bananas. Overripe bananas with brown or black peels are ideal for banana bread because they are sweeter and have the best flavor.

⭐If your bananas aren't quite ready yet, you can "ripen" them in the oven. You can also use frozen bananas. Keep reading for tips on how to do both. 

Brown sugar. Brown sugar adds moisture and rich molasses flavor to the banana bread. 

Oil. I use canola oil, a neutral-flavored oil. But any kind of vegetable oil will work. 

Cinnamon. One teaspoon ground cinnamon perfectly complements the bananas and adds warm and cozy flavor.  

Bisquick Pancake & Baking Mix. There's no need to add baking powder or baking soda, as Bisquick contains leavening agents. This recipe has been tested with Original and Heart Smart Bisquick pancake mixes. 

Chocolate chips, optional. Chocolate chips are awesome in banana bread. If using chocolate chips, I recommend mini chocolate chips because they disperse more evenly throughout the bread and don't sink. 

Nuts, optional. If you like nuts in your banana bread, stir ½ cup of chopped walnuts, pecans, or macadamia nuts into the batter at the very end. 

How to Make Banana Bread with Pancake Mix

Step 1: Place bananas in a large bowl and mash them with a fork or potato masher.

Step 2: To the mashed banana, add the brown sugar, oil, eggs, vanilla, and cinnamon. Stir until well combined.

Step 3: Add the Bisquick mix one cup at a time, stirring after each addition. Stir until just combined. Optional, stir in ½ cup mini chocolate chips.

Step 4: Pour banana bread batter into 9 x 5 loaf pan lined with parchment paper or sprayed with nonstick cooking spray. If using chocolate chips, sprinkle a few over the top of the batter.

Step 5: Bake at 350 degrees for 55-65 minutes until golden brown. If the top gets too brown before it's done baking, loosely tent the top with foil. 

Place the pan on a wire baking rack to cool for 10-15 minutesRemove the bread from the pan and let it cool on the wire rack the rest of the way.

  • Let the bananas cool completely, scoop out the flesh, and mash. If there's a lot of liquid, strain it off, or it can affect the texture of your baked goods.

How to Make Banana Bread with Frozen Bananas

Feeling pressure to do something with all those overripe bananas? No need. Just throw them in the freezer -- whole, with peels on. Because you can use frozen bananas to make banana bread when you're good and ready. Just follow these easy steps!

  • Defrost the bananas. Place the frozen bananas on a plate and let them sit at room temperature. Or defrost frozen bananas in the microwave at 50% power for 3-4 minutes or until they're completely thawed. 
  • Strain off the liquid. Thawed bananas are very soft and very watery, and all that liquid can make banana bread dense and heavy. Mash the bananas and strain off the liquid (unless you're following a recipe that specifically says otherwise). After straining off the liquid, the remaining mashed banana should be the same consistency as bananas that were never frozen.

How to Make Fluffy Pancakes from Pancake Mix

You don't have to make homemade pancakes to get thick and fluffy pancakes. These are my tricks for making thick and puffy pancakes from a mix. 

  • Add baking powder. A little bit of extra leavening lifts up the batter.
  • Don’t overmix the batter. Mix pancake batter just until the ingredients are combined and there are still some lumps. 
  • Separate the egg and whip the whites. Mix the yolk into the batter for rich flavor. Then beat the egg white into soft peaks and fold them separately into the batter. The whipped egg whites will help the pancakes puff up. 
  • Let the batter rest. Letting the pancake batter mixture rest gives the liquid time to hydrate the flour and the leavening agents time to distribute evenly through the batter. 

Ingredients

These easy banana pancakes come together with simple ingredients.

Pancake mix. This recipe has been tested with regular Bisquick, Heart Smart Bisquick, and a complete "just add water" pancake mix. All worked equally well. 

Bananas. You'll need about two medium bananas to get one cup of mashed banana for the pancakes.

If you're using frozen and thawed bananas, you may need more than 2. And be sure to strain off the excess liquid or it will thin the batter. 

Butter or oil. You'll need a little butter or vegetable oil to lightly coat the pan for the pancakes and the banana topping. 

Variations

Extracts. Add a splash of maple, almond, coconut, or vanilla extract. 

Spices. Nutmeg, cloves, allspice, cardamom, or any of your favorite warm baking spices would be delicious! 

Nuts. Add walnuts, pecans, almonds, or macadamia nuts for crunchy nuttiness. 

Chocolate chips. A handful of chocolate chips is always a welcome addition to banana pancakes. 

Blueberries. Add fresh blueberries to the batter or sprinkle a few frozen blueberries on top of the pancakes before you flip them. 

How to Make Banana Pancakes with Pancake Mix

1. Combine the dry ingredients. 

Whisk the pancake mix, baking powder, and cinnamon together in a large bowl. Push the mixture to the sides of the bowl making a well in the center.

2. Separate the eggs and whip the egg whites. 

Separate the eggs, letting the whites fall into a small bowl. Place the yolks in the center of the well in the dry ingredients. 

Beat the egg whites until soft peaks form. Set aside.

3. Mix the wet ingredients with the dry ingredients. 

Add the mashed banana and milk to the well. Whisk the wet ingredients together in the center of the bowl, then whisk the banana mixture into the dry mixture until just combined. Do not overmix, it's okay if there are lumps. 

Use a spatula to gently fold the beaten egg whites into the pancake batter until just incorporated.

Let the batter rest for 5-10 minutes. 

4. Make the delicious pancakes. 

Heat a cast iron skillet or non-stick pan over medium-low to medium heat until a sprinkle of water sizzles across the surface of the pan. 

Use a folded paper towel or pastry brush to coat the pan with a thin layer of butter or oil. Repeat this step between batches, wiping out any residue from the previous batch to keep it from burning. 

Using a measuring cup, drop ⅓ cup of batter into the frying pan.

Cook the first side until the edges are dry and small bubbles start to form and pop on the surface of the pancake, 2-4 minutes. Flip and cook the second side for another minute or two. 

5. Make caramelized bananas. 

Warm a nonstick skillet over medium heat. Place the butter into the pan. 

Slice the bananas into ½" to ¾" slices. Add the slices of bananas, maple syrup, a sprinkle of cinnamon, and a dash of salt to the pan.  

Cook for a few minutes on each side until golden brown.

Freezing Instructions

Leftover pancakes freeze beautifully. Place them on a wire rack to cool completely, then stack them in an airtight container or zip-top bag in between layers of paper towels or parchment paper. Freeze for up to 3 months. 

To thaw, place frozen pancakes on a plate, uncovered, and heat in the microwave for a minute or two until hot.

  • To ensure the center of the pancake is done, insert a toothpick into the center. If it comes out clean, it's done.

Ingredients

Banana Pancakes

  • 2 cups pancake mix regular Bisquick, Heart Smart Bisquick, or "just add water" pancake mix
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1 cup mashed banana about 2 medium bananas
  • ¾ cup milk
  • 1-2 tablespoons butter or oil to coat the pan between batches

Maple Banana Topping

  • 1 teaspoon butter or oil
  • 2 bananas
  • 2 tablespoons maple syrup plus more for serving
  • dash cinnamon
  • dash salt

Instructions

  • Whisk the pancake mix, baking powder, and cinnamon together in a large bowl. Push the mixture to the sides of the bowl making a well in the center.
  • Separate the eggs, letting the whites fall into a small bowl. Place the yolks in the center of the well in the dry ingredients.
  • Beat the egg whites until soft peaks form. Set aside.
  • Add the mashed banana and milk to the well. Whisk the wet ingredients together in the center of the bowl, then whisk them into the pancake mix until just combined. Do not overmix, it's okay if there are lumps.
  • Use a spatula to fold the beaten egg whites into the pancake batter until just incorporated. Let the batter rest for 5-10 minutes.
  • Heat a cast iron skillet or nonstick pan over medium-low to medium heat until a sprinkle of water sizzles across the surface.
  • Use a folded paper towel or pastry brush to coat the pan with a thin layer of butter or oil.
    Repeat this step between batches, wiping out any residue from the previous batch to keep it from burning.
  • Using a ⅓ cup measuring cup, drop batter onto the pan. Flip when the edges are dry and small bubbles start to form and pop on the surface, 2-4 minutes. Cook the second side for another minute or two.
    Serve with warm maple bananas and warm maple syrup.

Maple Banana Topping

  • Warm a nonstick skillet over medium heat. Place the butter in the warm pan.

This easy recipe for fluffy air fryer cinnamon rolls was inspired by popular Tiktok cinnamon rolls videos that transform store-bought Pillsbury brand cinnamon rolls into something that tastes more like homemade cinnamon rolls.

These delicious cinnamon rolls are baked in heavy cream, which makes them super moist and tender, then slathered in a thick layer of easy homemade cream cheese frosting -- the best part IMO!

Ingredients

Pillsbury Grands Cinnamon Rolls. This is the BIG tube with 5 rolls. I get the ones with Cinnabon Cream Cheese Icing.

Heavy cream. It may also be called heavy whipping cream -- same thing.

Softened butter. You want the butter to be very soft so it creams well with the cream cheese.

Softened cream cheese. Use room temperature cream cheese that's nice and soft so it whips up without lumps.

Powdered sugar. If you prefer stiffer icing, you can add a little more powdered sugar.

Heavy cream. Just a teaspoon is all you need to make the frosting smooth and creamy.

Step-by-Step Instructions

Step 1: In a medium bowl, beat the cream cheese, butter, powdered sugar, cream, and vanilla until smooth and fluffy.

If desired, stir or mix the frosting from the tube of cinnamon rolls into the homemade cream cheese frosting.

Step 2: Preheat the air fryer to 360 degrees. Spray avocado oil or olive oil into an 8 or 9-inch square baking pan that fits your 6-quart air fryer. You can also line the pan with parchment paper.

Separate dough and arrange the cinnamon rolls in a single layer in the pan. Pour ½ cup cream around the rolls.

Step 3: Place the pan into the air fryer basket. The easiest way I've found to lower the pan into the bottom of the basket is with a foil sling. Tuck the ends of the foil down before sliding the basket in.

Step 4: Remove the pan and flip rolls over. Air fry for 6 more minutes or until the tops are golden brown and the internal temperature reads 190. Exact time may vary for your air fryer model. Check a couple of minutes before the end of the cook time so they don't overcook.

Step 5Frost the rolls. Slather the cream cheese frosting over the warm cinnamon rolls.

  • Use an aluminum foil sling to lower and lift the pan into and out of the air fryer basket.
  • For best results, check for doneness a couple minutes before the end of the cooking time -- no one wants hard cinnamon rolls!

Cruffin -- a funny name for a seriously delicious pastry. The word comes from a mix of croissant and muffin because it's made by rolling up flaky pastry dough into the shape of a muffin.

But I'm adding another breakfast pastry to the mix: cinnamon roll.

Chocolate Cinnamon Cruffins are made with layers of gloriously flaky dough filled with chocolatey butter, cinnamon brown sugar, and chocolate chips rolled into a fun muffin shape.

This delicious cruffin recipe is perfect just the way it is or with a smear of cinnamon roll frosting.

Pillsbury crescent dough. This easy cruffin dough is made from cans of crescent rolls. You can use the kind with perforations and pinch them together or the crescent dough sheets. 

Butter. Use room temperature butter that is soft enough to spread.

Cocoa powder. I use dark chocolate powder because I love the intensely rich chocolate flavor, but you can also use regular cocoa powder.

Brown sugar. I like brown sugar for the rich flavor. Dark or light brown sugar will both work equally well. You can also use white sugar.

Cinnamon. A full tablespoon of ground cinnamon adds rich, warm flavor.

Mini chocolate chips. Mini semi-sweet chocolate chips are rolled into the crescent roll dough so each bite of cruffin has a bit of chocolate in it.

Cinnamon Roll Frosting

Powdered sugar. Confectioner's sugar, or icing sugar, is the base of the cinnamon roll frosting.

Melted butter. A little melted butter adds rich creaminess to the frosting.

Milk. Add the milk to the frosting a little at a time until it reaches your desired consistency. You can also use cream.

Detailed Instructions

1. Prep the oven and muffin tin.

Preheat the oven to 350. Spray a muffin pan with nonstick cooking spray.

Pro Tip: Crescent dough is easiest to work with when it's cold. Keep it in the refrigerator until you are ready to start rolling it out.

2. Make the cocoa-butter mixture.

In a small bowl, stir the softened butter and cocoa powder together.

3. Make the cinnamon sugar mixture.

In a separate mixing bowl, stir the brown sugar, cinnamon, and mini chocolate chips together.

4. Assemble the chocolate cinnamon cruffins.

Roll out the crescent dough onto a silicone baking mat, silicone cutting board, or a lightly floured work surface.

If using crescent roll dough with perforations, pinch the seams to seal. It's okay if they're not perfectly sealed.

5. Spread the butter onto the dough.

Use a butter knife to evenly spread about 2 ½ tablespoons of the cocoa powder butter mixture onto each sheet of dough. You can spread it all the way to the edges of the dough.

6. Add the cinnamon-sugar mixture.

Sprinkle ⅓ of the brown sugar chocolate chip mixture (about ½ cup loosely packed) evenly on top of the butter. Gently press it into the dough.

7. Roll and cut.

Tightly roll up the sheet of dough from the long end.

Use a sharp knife to cut the log in half cross-wise so you have 2 logs.

Cut each log in half lengthwise.

Roll each portion of dough with the cut sides facing up into the shape of a cinnamon roll.

Place the rolled up cruffins into the prepared muffin tin.

8. Bake.

Bake for 18-20 minutes or until the tops of the cruffins are deep golden brown.

Let the cruffins cool for a few minutes in the pan before removing them.

9. Make the cinnamon roll frosting.

In a small bowl, stir the powdered sugar, melted butter, vanilla, and 1-2 tablespoons of milk. Add more milk a little at a time until it reaches the right consistency. I use 3 tablespoons.

Spoon the soft frosting over the warm cruffins. Sprinkle with a few more mini chocolate chips, if desired.

Storage

Store leftover baked cruffins in an airtight container for a few days. Reheat in the microwave.

Freeze unfrosted cruffins in a freezer bag or freezer-safe container for a month.

Pork sausage. I use regular pork sausage, but you can also use turkey sausage or seasoned sausages like breakfast sausage, hot sausage, or Italian sausage. 

Cheddar cheese. I use sharp cheddar cheese because I love the bold flavor. You can use mild cheddar or a different kind of cheese like Monterey Jack, pepper Jack, mozzarella cheese, Swiss, or a combination.

Sour cream. Sour cream whipped in with the eggs and milk makes the eggs super creamy.

Green onions. Green onions add fresh, mild onion flavor and pretty green color. You can also use red onion or shallots.

Red bell pepper. I love red peppers because they are the mildest of the bell peppers, but you can use yellow, orange, or green bell pepper. 

Dijon. A little bit of Dijon adds rich flavor to the egg bake.

How to Make Sausage Egg Bake

Step 1: Brown sausage with salt and pepper in a large skillet over medium-high heat, breaking it up into small pieces, until the meat is no longer pink. Drain off excess grease.

Step 2: Whisk eggs in a large bowl. Add milk, sour cream, Dijon, salt, and black pepper, and whisk until combined.

Step 3: Place cooked sausage in a greased 3-quart casserole dish. Add the diced red pepper, sliced green onions, and 1 cup of shredded cheese. Evenly pour egg mixture on top.

If making ahead, cover with aluminum foil or plastic wrap and chill for up to 24 hours. Let it sit at room temperature for 30 minutes before baking.

Step 4: Bake in preheated oven at 350 degrees for 40-45 minutes or until the center is just about set. Add remaining 1 cup of cheese and bake for 5 more minutes or until the cheese is melted.

Cool for 10 minutes.

  • Whisk the eggs before adding the rest of the egg mixture ingredients. It can be difficult to tell if you've broken all the yolks once the sour cream and milk have been added.

  • If you're baking this the next day, let it sit at room temperature for about 30 minutes before baking. If it's still cold, you may need to add a few minutes to the bake time.

  • 2 pounds pork sausage
  • 12 large eggs

Snickerdoodle cookie mix. One 17.9 ounce package of Betty Crocker Snickerdoodle Cookie mix provides the base for the soft pumpkin muffins and the cinnamon-sugar mixture for the streusel topping.

Oatmeal. Oatmeal makes these pumpkin snickerdoodle muffins breakfast worthy and adds texture to the crunchy top

Pumpkin pie spice. Pumpkin spice adds warm flavor to these pumpkin snickerdoodle muffins. Make your own pumpkin spice using this simple recipe.

Baking powder. If you haven’t used your baking powder in a while, test it to make sure it’s fresh so you’ll get the full benefit of this leavening agent. Just place a teaspoon of baking powder in a half cup of hot water. If it bubbles, it’s ready to use!

Oil. I used canola oil because it’s a neutral-flavored oil. But you can use vegetable oil, grapeseed oil, or light olive oil. 

Eggs. Use room temperature eggs so they will mix into the batter more easily. Cold eggs can curdle the batter if they hit warm fat.  

Pumpkin. This recipe calls for pumpkin puree, not pumpkin pie mix, so make sure you grab the right thing at the store.  

Milk. I have used evaporated milk and 2% milk in this recipe— just because of what was in my kitchen at the time —- and both worked great.

How to make Pumpkin Snickerdoodle Muffins

Preheat the oven to 375. Prepare a muffin tin with cooking spray or paper muffin liners. 

In a large mixing bowl, combine the snickerdoodle cookie mix (not the cinnamon sugar mixture), oatmeal, and pumpkin pie spice.

Set aside ½ cup of the mixture in a separate small bowl for the streusel topping.

To the large bowl, add the baking powder and flour. Stir. Add the oil, eggs, pumpkin, and milk to the flour mixture. Stir with a wooden spoon until well combined.

Make the streusel topping. Add the cinnamon sugar packet and melted butter to the reserved cookie mixture. Stir until combined. 

Fill each muffin cup almost all the way full. Sprinkle the cinnamon sugar crumb topping on top of the muffin batter.

Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean or the internal temperature reaches about 200 degrees.

Place the muffin tin on a wire rack to cool for about 5 minutes. Remove the muffins from the tin and let cool completely on the wire rack.

Maple syrup. Use real maple syrup, not pancake syrup, for the best flavor in this pumpkin spice syrup recipe. 

Pumpkin puree. Canned pumpkin blends perfectly into the maple syrup and adds that sweet, earthy flavor we crave in the fall. 

Pumpkin pie spice. Just ½ teaspoon of pumpkin spice adds rich flavor and warmth to this delicious syrup. If you don’t have pumpkin pie spice in your cabinet, you can make your own. Pancake mix. You can make this easy recipe for pumpkin pancakes with box mix using Bisquick pancake mix, Heart Smart Bisquick, or "just add water" complete pancake mix.

Baking powder. A little baking powder helps fluff up these pumpkin pancakes

Pumpkin pie spice. Pumpkin spice transforms pancake mix into pumpkin pie pancakes! If you don’t have this spice blend, use ½ teaspoon cinnamon, ¼ teaspoon ginger, ⅛ teaspoon nutmeg, and ⅛ teaspoon cloves. Make your own jar of pumpkin spice with my recipe here.

Egg. Separating the egg makes the most of both parts of the egg. The egg yolk adds richness to the batter, and the whipped egg white adds fluffiness

Pumpkin puree. Canned pumpkin keeps these pancakes nice and moist. Be careful that you don't grab a can of pumpkin pie filling by accident. You can also use fresh pumpkin puree. 

Real maple syrup. A little natural maple syrup adds sweetness and rich flavor

Step-by-step Instructions

Step 1: In a large bowl, whisk the pancake mix, baking powder, and pumpkin pie spice together.

Push the dry ingredients to the sides of the bowl to make a well in the center for the wet ingredients.

Step 2: Separate the egg yolk and egg white and drop the yolk into the well. See FAQs below for how to separate an egg. 

In a small bowl, whip the egg white with a whisk or mixer until light and fluffy and soft peaks form

Step 3: Add the pumpkin puree, maple syrup, and milk to the well in the dry ingredients.

Whisk the wet ingredients together, then incorporate them into the dry ingredients until just combined. There should still be lumps.

Step 4: Fold the beaten egg white into the pancake batter with a spatula until just combined. The batter will be thick. Let the batter rest for 5-10 minutes

Step 5: Heat a large cast iron or nonstick skillet over medium-low to medium heat. Lightly coat the skillet with butter.

Drop ⅓ cup of pumpkin pancake batter onto the hot skillet.  Cook until the edges of the pancakes are slightly dry, and small bubbles just start to form and pop on the surface, 3-4 minutes.

Step 6: Flip and cook the second side for 1-2 minutes or until cooked through.

Add a thin layer of butter to the skillet between batches.

Caramelized Banana Topping for Pancakes

For an extra special treat, serve your pumpkin pancakes with bananas caramelized in butter, brown sugar, cinnamon, and toasted pecans.

  • Melt 2 tablespoons of butter and 2 tablespoons of brown sugar together over medium heat in a skillet.
  • Add ½ teaspoon of cinnamon and stir it all together.
  • When the mixture is bubbly, add 2 sliced bananas and stir them around in the sauce for a minute or two, until the sauce is thickened and the bananas are evenly coated.
  • Remove the bananas from the heat. Spoon the bananas over the pancakes and sprinkle with toasted pecans.

Expert Tips

  • Don’t overmix the batter; it should be a little lumpy.

  • Be careful not to overheat the skillet. If the pancakes turn brown before they’re ready to flip, turn the heat down. 
  • This pancake batter is thick. To know when it's time to flip, watch for dry edges and a few small bubbles that form and pop around the edges.
  • To check for doneness, poke the center of a pancake with a toothpick. If it comes out clean, the pancake is done.

How do you make perfectly round pancakes?

I found that by pouring pancake batter from a round measuring cup, the pancakes came out perfectly round every time. When I poured the batter from an oval-shaped ladle, my pancakes came out oval-shaped. Go figure. 

Can you freeze pumpkin pancakes with baking mix?

Yes! Let the pancakes cool in a single layer on a wire rack, then place them in a ziptop freezer bag separated with paper towels or parchment paper.

Thaw frozen pancakes on a plate, uncovered, in the microwave for a minute or two until hot. 

How do I reheat frozen pancakes?

The easiest way to reheat frozen pancakes is to warm them in the microwave on high for 60-90 seconds or until warm and heated through.

What is the best way to separate an egg?

Here are the two easiest ways to separate an egg:

With the shells. This is how I separate eggs. Carefully crack the egg open and keep the yolk contained in one of the shells, letting the white run off and into the bowl. Holding one half of the egg shell in each hand, pass the egg yolk from shell to shell, letting the egg white slip down and into the bowl.

With your hands. Crack the egg open and pour the contents into one of your hands with your fingers slightly separated. Hold onto the yolk and let the whites slip between your fingers into the bowl.
You can also use an egg separator, which is a spiral-shaped kitchen gadget that mimics method #2.

What can I do with leftover canned pumpkin?

There are plenty of delicious things you can do with leftover pumpkin puree.

Ingredients

  • 1 ½ cups pancake mix works with regular or Heart Smart Bisquick or "just add water" pancake mix
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin spice
  • 1 egg separated
  • ¾ cup pumpkin puree
  • 2 tablespoons maple syrup
  • ¾ cup milk

Instructions

  • In a large mixing bowl, whisk the pancake mix, baking powder, and pumpkin pie spice together.
    Push the dry ingredients to the sides of the bowl, making a well in the center.
  • Separate the egg, letting the whites fall into a separate small bowl.
    Place the yolk in the well in the dry ingredients.
    Beat the egg white until light and fluffy and soft peaks form.
  • Add the pumpkin puree, maple syrup, and milk to the well in the dry ingredients.
    Whisk the wet ingredients together in the center of the bowl, then whisk them into the dry ingredients until just combined.
    There will still be lumps, and that's okay.
  • With a spatula, fold the beaten egg white into the pancake batter until just incorporated. Let the pancake batter rest for 5-10 minutes.
  • Heat a cast iron skillet or nonstick skillet over medium-low to medium heat until a sprinkle of water sizzles on the surface.
  • With a folded paper towel or pastry brush, coat the pan with a thin layer of butter. Repeat this step between batches.
    Drop about ⅓ cup of batter onto the pan. When the edges are dry and small bubbles start to form and pop at the surface, it's time to flip, usually after 3-4 minutes.
    Cook the second side for another 1-2 minutes.

Notes

This recipe makes six or seven 5-inch light and fluffy pancakes.
Don’t overmix the batter; it should be a little lumpy. 
Use a cast iron skillet, if you have one. It browns the pancakes much more evenly than a nonstick skillet. 
Be careful not to overheat the skillet. If the pancakes turn brown before they’re ready to flip, turn the heat down.
These pancakes are quite thick. To ensure the center is done, insert a toothpick in the center. If it comes out clean, it's done.

Banana PB&J Overnight Oats have all the nostalgic flavors of classic peanut butter and jelly sandwiches swirled into creamy oats for a delicious and filling breakfast.

And it's one of the easiest breakfasts to make.

Just mix a mashed banana with oats, peanut butter powder, almond milk, and a little salt, then stash it in the fridge overnight. The next day, add a swirl of jelly or jam and your favorite toppings and breakfast is served!

There's no cooking involved. The cold oats are actually quite delicious, but you sure can warm them up if you like!

Peanut butter powder. Peanut butter powder has all the flavor of peanut butter and a good dose of protein without the fat that regular peanut butter has.

Oats. Steel-cut oats or old-fashioned oats work best in overnight oats. Instant oats, aka quick oats, will get too mushy.

Unsweetened almond milk. I use non-dairy milk, but any type of milk will work in overnight oats recipes.

Salt. Just a pinch of salt brings out the flavor in everything.

Toppings. This is the best part! To get the true pb&j vibe, add a swirl of fruit spread, then top with fresh berries or fruit, nuts, even a sprinkle of chocolate chips!

Step-by-step instructions

Mash one banana in a mason jar, resealable glass container, or a bowl.

Add the peanut butter powder, oats, almond milk, and a pinch of salt. Stir well.

Cover and refrigerate for 8 hours or overnight.

In the morning, give the oats a good stir and add a swirl of your favorite jelly or jam and some fresh fruit right on top of the cold overnight oats.

  • Use natural peanut butter or seed butter instead of peanut butter powder
